Veggie and Chicken Stir-Fry
Ingredients:
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 cup broccoli florets
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 tablespoon cornstarch
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and bell pepper to the skillet and cook for 3-4 minutes until they are tender.
- Add the minced garlic to the skillet and cook for another 30 seconds.
- Add the chicken to the skillet and cook for 5-6 minutes until it is no longer pink.
- Stir in the broccoli and mushrooms, and cook for an additional 3-4 minutes.
- In a small bowl, whisk together the cornstarch, soy sauce, chicken broth, black pepper, and crushed red pepper flakes. Pour the mixture into the skillet and stir well.
- Cook the stir-fry for an additional 2-3 minutes until the sauce has thickened.
- Serve hot and enjoy!
